What this knife is for
The 7-inch santoku is the Japanese-style companion to the chef's knife. Where a chef's knife has a curved belly for rocking, the santoku has a flatter profile designed for push-cuts and precise slicing. If you're a home cook who slices more than you rock-chops, the santoku often becomes your favorite knife.
- Fish and seafood slicing. Sashimi-style clean slices without tearing.
- Paper-thin vegetables. The straighter profile lets you slice cucumbers, radishes, or shallots into near-transparent slices.
- Sushi prep at home. Cutting through nori-wrapped rolls cleanly.
- Precision protein slicing. Chicken breast, pork tenderloin, cooked steak.
- Herbs and garnish. Fine chiffonade of basil, mint, cilantro without bruising.
The santoku's flat spine means it doesn't rock as smoothly as a chef's knife for bulk chopping. Use both. Chef's knife for rocking, santoku for push-cut precision.
Blade steel and edge
The cutting core is 10Cr15CoMoV steel, hardened to HRC 60–62. The edge angle is 15° per side.
