What this knife is for
The 4-inch paring knife is your detail knife — the one you reach for when a chef's knife feels like using a broadsword for embroidery.
- Peeling apples, potatoes, pears in-hand. The short blade gives you control that a chef's knife can't touch.
- Coring strawberries, tomatoes, apples. The pointed tip pops the stem end out clean.
- Deveining shrimp. Score the back, lift the vein.
- Trimming visible fat off small cuts. Trimming brisket edges, silverskin bits your boning knife missed.
- Segmenting citrus (supreming). The small blade traces between orange or grapefruit segments cleanly.
- Garnish work. Radish roses, cucumber ribbons, tomato flowers — anything that needs precision.
Blade steel and edge
The cutting core is 10Cr15CoMoV steel, hardened to HRC 60–62. The edge angle is 15° per side.

How to care for Damascus knives
- Hand-wash only, dry immediately. Never dishwasher. Dishwasher detergent attacks the softer outer Damascus cladding and the tumbling cycle nicks the edge.
- Store on a magnetic bar, in a wooden knife block, or in a blade sheath. Loose in a drawer = dinged edge.
- Cut on wood or soft plastic. Never glass, ceramic, or stone. Never cut bones or frozen food — those chip a Damascus edge fast.
- Hone before each use with a ceramic rod. Realigns the edge micro-serrations. Takes 10 seconds.
- Sharpen with a whetstone once or twice a year. The 10Cr15CoMoV core responds beautifully to a 1000/6000-grit stone.
