What this knife is for

The 7-inch nakiri is a Japanese-style vegetable specialist — a rectangular blade with a completely straight edge, designed for one thing: precise up-and-down chopping of produce. If you cook a lot of vegetables, this blade will surprise you with how much cleaner and faster your veg prep becomes.

  • Cabbage, kale, leafy greens. The straight edge cuts cleanly with a single downward motion — no need to rock.
  • Green onion, chives, herbs. Fine, uniform cuts because the entire blade contacts the board at once.
  • Cucumber, zucchini, summer squash. Perfectly uniform rounds or half-moons.
  • Bell peppers and mushrooms. Precise strips for stir-fry.
  • Chopping vegetables for stock or mirepoix. Faster than a chef's knife because the straight edge lets you chop-and-scoop in one motion.

The nakiri is NOT for meat, bones, or hard-shell foods. It's a produce-only tool. If you want one Japanese-style knife and you cook mostly plant-forward, this is often a better first choice than a santoku.

What steel is this knife made from?

The cutting core is 10Cr15CoMoV steel — a high-carbon alloy in the same chemistry class as premium Japanese knife steels (roughly 1% carbon, 15% chromium, plus cobalt, molybdenum, and vanadium). Cobalt is why this steel class holds an edge: it lets the blade be heat-treated to HRC 60±2 without becoming brittle. Cheaper Damascus knives using plain 9Cr18MoV or generic "high-carbon stainless" typically max out at HRC 56-58.

How to care for Damascus knives

  1. Hand-wash only, dry immediately. Never dishwasher.
  2. Store on a magnetic bar, in a wooden knife block, or in a blade sheath.
  3. Cut on wood or soft plastic. Never glass, ceramic, or stone. Never cut bones or frozen food.
  4. Hone before each use with a ceramic rod. Takes 10 seconds.
  5. Sharpen with a whetstone once or twice a year.
