Hardness rating: HRC 60±2. Ergonomic black-burl resin handle, riveted through. Hand-wash only. Backed by our 2-Year Epicurean Promise.
What this knife is for
The 8-inch chef's knife is the most-used knife in any kitchen. This one blade handles 80% of your daily prep — the workhorse you'll grab for onions, garlic, herbs, meat prep, and every general-purpose chopping and slicing task.
- Onion, garlic, ginger, herbs. Rock-chopping technique — the belly of the blade lets you dice, mince, and chiffonade fast.
- Butchering roasts and whole chicken. Enough length to break down a large cut, enough weight to power through a chicken carcass at the joints (not the bones).
- Slicing tomatoes, cucumbers, bell peppers. The sharp 15° edge slices without crushing.
- Chopping hard root vegetables. Butternut squash cubes, carrot rounds, potato dices.
- Julienning and dicing bulk veg. The 8" length lets you produce a full mise en place in a fraction of the time smaller blades take.
If you own only one high-end knife, it's this one. Every other blade is a specialist that complements the chef's knife.
What steel is this knife made from?
The cutting core is 10Cr15CoMoV steel — a high-carbon alloy in the same chemistry class as premium Japanese knife steels (roughly 1% carbon, 15% chromium, plus cobalt, molybdenum, and vanadium). Cobalt is why this steel class holds an edge: it lets the blade be heat-treated to HRC 60±2 without becoming brittle. Cheaper Damascus knives using plain 9Cr18MoV or generic "high-carbon stainless" typically max out at HRC 56-58.
