What this knife is for

The 6-inch boning knife is a specialist blade. It's what you reach for when a chef's knife is too big and a paring knife is too small — the "in-between" that turns a whole chicken, a rack of lamb, or a fresh fish into portioned, prep-ready pieces.

  • Deboning poultry and small game. The 6" length gives you enough reach to work around a whole chicken carcass without banging your hand into the cutting board.
  • Trimming silverskin off pork tenderloin and beef roasts. The narrow blade slips under the silverskin cleanly without wasting meat.
  • Filleting freshwater fish and small saltwater fish. Not a dedicated fillet knife (which is more flexible), but capable for trout, walleye, snapper.
  • Portioning trimmed cuts. Cutting brisket into serving portions, breaking down a pork shoulder after cook.

The cutting core is 10Cr15CoMoV steel, hardened to HRC 60–62. The edge angle is 15° per side.

How to care for Damascus knives

  1. Hand-wash only, dry immediately. Never dishwasher. Dishwasher detergent attacks the softer outer Damascus cladding and the tumbling cycle nicks the edge.
  2. Store on a magnetic bar, in a wooden knife block, or in a blade sheath. Loose in a drawer = dinged edge.
  3. Cut on wood or soft plastic. Never glass, ceramic, or stone. Never cut bones or frozen food — those chip a Damascus edge fast.
  4. Hone before each use with a ceramic rod. Realigns the edge micro-serrations. Takes 10 seconds.
  5. Sharpen with a whetstone once or twice a year. The 10Cr15CoMoV core responds beautifully to a 1000/6000-grit stone.
